Besides the wines, our little grass shack is our pride and joy. We decided from the start that we wanted to be able to make our wine in our own facility to be able to let ambient yeast conduct the fermentation. This is not possible in a shared facility.

All of our wines are processed and aged in this straw bale barn. The 24-inch thick structural walls consist of tightly stacked bales of rice straw, covered with natural limestone plaster.

The building maintains an optimal humidity level and internal temperature of 50-60 degrees both summer and winter, without the need for heating or cooling. Solar panels on the roof provide enough energy for the winery and our home.
